Which monk armor set do you think its the best for PvE and PvP

PvE - Ascentic +7 mana armor set
PvP - 15 more armor when enchanted set

the enchanter set is 10 AL if i aint mistaken :/

anyways, i wouldnt ever wear a 'full' set of the same type. i mostly run something like

Pve - Healer;
Shepherds (top)
Judges (pants)
2x Ascetic (hands, foot)

Pve - Prot
^same as above, just that i mix the order due to the sup runes (yes, i use 2, my own style of playing, dont comment that please =P)

for Boon Prot, its 2 Ascetic (hands & foot) and the other 2 are the enchanter set.

it really depends on the situation, but thats what ill probably always use for pvp since most people really only want a boon prot anyways.

for pve, its always mixed, but thats my standart set, even for henching. the only time id switch to a full Ascetic set is if im in a full guild group, and i know they wont mess up like most pugs brining me in trouble, therefore having less armor.

but usually, full Ascetic for pve = bad bad bad (except 55 farming =p)

+10 while enchanted ftw. Assuming you're running a boon prot in PvP you'll almost always be enchanted. Just do +10 while enchanted on the frontpiece and legs then asthetics on the rest.

I have a set of ascetic, a set of acolytes (just body and legs, ascetic on the rest) and I just got a full set of shepherds, as I'm running a boon prot less and less often now, and find myself not enchanted much.

For boon prot, it's ascetic with acolyte body and legs ftw, but for non-enchant based monks I'd say shepherds is the way to go.

I myself made a pve monk just so i could weapon switch/armor switch during matches. i use:
2x Ascetic (hands, foot) always
Then if i am vs. a team with more melee i'd use
Judges (chest and pants)
or against a team with more elemental damage such as a fast cast air spike team I would use
Shepherds (chest and pants)

For pve however... i prefer to just use full Ascetic's as you can never be too sure how your pug will be so you gotta keep your energy as high as possible incase you gotta spam healing on overextenders =/

Another way to minimize the damage you would take can be to use special offhands such as the shield that offers +10 AL vs. Piercing attacks which i would use vs. rspike or I would use one of my +10 AL vs. either lighting/cold/fire/earth damage offhands to keep damage against thap specific element in that specific match to a minimum. And then comes the process of kiting and avoiding projectile attacks and prekiting which I am sure has been mentioned in an article somewhere in the forum.
So there isn't really a "best" armor type as you never know what you will come against. But for a pvp char, guess you should just go by ur own prefrence.
