When my girlfriend and me are playing together we get a completely different skillset for sale at skill traders.
Example:
The skill trader in Old Ascalon can teach me the following fire magic skills:
Fire Attunement
Fire Storm
Fireball
Flare
Incindary bonds
Inferno
Lava font
My girlfriend can buy the following:
Conjure flame
Fire Attunement
Fire Storm
Fireball
Flame Burst
Flare
Immolate
Incindiary Bonds
Inferno
Lava Font
Meteor shower
Pheonix
Rodgort's Invocation
The only different between our accounts is that she has collectors prophecies, else we both have normal factions. I've seen similar differences with other skill traders as well, some can sell me skills she can't buy. Has anyone else experienced anything like this?

This isn't a bug.
Its an Update to the skill traders.
They will offer you ANY skill you have unlocked to your account for the class you are, regardless if skill trader is supposed to have that skill.
This is why your girlfriend has more choices - She simply has more skills that have been unlocked to her account in the elementalist profession.
To Clarify: SKill Traders have their "Base" skills they offer - and they all offer them nomatter who is buying from the trader. But in ADDITION to those basic skills, they will offer you any skill in that profession that you have previously unlocked, and mark it with the "Unlocked" tag behind the name. So an acconut that has unlocked more skills will have more choices at the trader.

also note that the skills are chapter specific.
example.
my ele really loves a fire skill only available in prophecies and my Cantha ele has to go to lions before it will appear on the list for me to buy

Ah... Still doesn't make complete sense though.. She's played far more as a mesmer then me, but I can still buy more skills then her as mesmer (I've barely played any at all).

fix the skill trader in GH! it doesn't offer any assassin and ritualist skills.

Maybe you unlocked some Mesmer skills but she hasn't?

That wouldn't make much sense.. I've had a secondary mesmer, who only unlocked skills by doing quests, I didn't buy any skills for that one, while she did the same quests, unlocking the same skills. With my new mesmer as well, I only bought a couple of skills she doesn't have.
