I would like to see some special PvE instances in the future chapters where enemies have different skillbars and profession combinations each time you go there. It would a bit like PvP because you can't fully prepare for every opponent. Some lazy people of course resign and try again until they have easier spawn but this could be partially fixed by keeping the beginning enemies same but later on you will see very different spawns and then most won't waste time for resigning. It would make solo, dual or triple farming (bot farming too) very hard because you really don't know what you are going to face. These special instances would also have special rewards.
I'm just a bit bored that eventually you will know every damn area and what it holds. In my opinion, PvE needs dynamic things to remain interesting.

8 skills per enemy including self heal and res on every enemy once you reach lvl 20 (run in terror)
variations on skill bars and builds even within the same mob.

The most ill favored missions and areas are those in PvE where the enemies attempt to act like they are a PvP group. The AI is just not smart enough to pull that off.
While I agree that a PvE dynamic zone/quest areas are needed, I would say affering mob only skills would be the better way to go rather than attempt to make them like a balanced PvP group. To me, the groups that act that way (Jade Brotherhood for example) are just dull and boring to fight against.
Now, those above mentioned do offer a somewhat descent challenge, but they are boring.
Mobs that have unique skills that only that type of mob has would do a lot to create more atmosphere and a more interesting enemy. Think Glint and her unique skills, for example; however not only boss mobs having unique skills.
An idea might be a foe whose attack splinters and causes bleeding with each shot while interupting. Overpowered? In PvP it would be, but in PvE it would create a foe worth watching and taking note of.

I agree with everything Lyra said except smaller and less mobs - pve is already too easy, imo it neeeds to be more challenging. I'd like to see random professions and skill bars on the enemy mobs, and better AI.
One of main reasons pve is too easy and often boring is that it's static and predictable. If you always know what you're going to be fighting against, it becomes more an issue of using the right build than actually being a decent player. If mob professions and skills were random it would actually make things more interesting for good players, and hopefully force bad ones into learning.
That said, mob only skills isn't a bad idea in itself, but it needs to be random as well.

Having some random weather would be nice. The weather could create different environmental effects that effect skills. A rainy area would have a natural "muddy terrain" effect. A blizzard would create an icy grounds like in the grotto. and other things.

Fewer monsters in the groups. 2-3 mob groups could be nice. With the mobs being a lot harder, that is.

lol - Lyra your comment about GvG and HA builds in mobs makes me shudder. The poor AI would be so lost and confused; not too mention the henchies would get rolled over in seconds. Would be funny to see though... poor henchies.
