Ok, I just capped the lvl 15 Dire Tiger in Pogmei Valley. My question is will it stay Dire until 20 or do I still have to train it the Dire way?

It's Dire. There's no going back! You can play it how you want.

The premade Dire is locked into Dire no matter what you do. The Elder Reef Crawler and Tiger are similarly locked down. Shame there's no preleveled Hearty pets.

why would you want a preleveled hearthy pet?...

ok if you REALY want 1 just take a lvl 5 to the tombs for 2-3 runs, but ill pick dire anytime
