There are quite a few builds posted in the sticky above and throughout this forum, but in general (and VERY stereotypical)...
/Mo - if you plan on being a secondary healer.
/R - if you plan on using both ritualist and ranger spirits.
/N - if you plan on being a minion bomber.
/E - if you plan on being a damage dealer.
/Me - if you plan on being a PvP ritual lord.
The "rare" subclasses are Assassin and Warrior (given that Ritualists normally aren't in the middle of the battle). But I've seen derivations of those as well that work pretty well.
So, it all depends on what you want to do with your Ritualist.

i started mine out as a rt/n which worked well in pve and pvp...
Id say mesmer would rock... but you might start trying to do too many things at once. Monk definately if you want to be a healing rit.
the thing to keep in mind is that you dont HAVE to use your secondary... many ritualist skills work together so well that you really dont need to rely on a secondar7 profession
Also- I see rt/a running around and I wonder what they are doing@!?!? I want to know if theres something (i have some ideas... but ????)
Likewise, I have been trying to work up a decent rt/w build... Im running around Random Arena with a candy cane axe!!! (no points in axe, I use tactics) but Im working on getting a build that relies on weapon spells.
One thing for rt/w that seems to work great is having enough points in tactics to use Watch Yourself in addition to defensive spirits- but Im currently trying to get away from my Binding Ritual builds....
also, in addition to the guy above me (on rt/r): beast mastery rits seem to be a good thing (weaponspells again)
