more than you think you should head over to the warrior section and check out the self-heals and buffs they use.

There is no such build. If you're playing with a team, you need that teams help. If you want to be a solo farmer...again, check the sub-forum in Campfire for farming warrior builds.
On Tanks: Dorlak signet, armor buff skills (ex: mesmer Physical/Elemental resistence) evasion stances and shouts (ex: watch yourself) are staples to most tanks. "Tanks", however, are not mobile (a requirment for a melee character) or particualarly effective since the gear exploit was abolished.
There is no "taunt" skill in GW that allows warriors to hold agro for the team anymore.
If your monks are dying a lot then you have agro issues. Monsters are not targetting you first, are not staying targetted to you long enough or are not dying fast enough. These are skills that have to be learned. You can't buy them from a trainer.
Tanks need to be first in and able to survive while all agro from all mobs focuses on them. It is only after agro has established on the warior that your team should be coming in to assist. If you are being too timid or your team is charging in at your side, then yes, your monks will take agro early, mobs will cast their most powerful spells on them instead of you and they will die...leaving you without backup.
Bodyblocking is an important first step to proper tanking. you see henchmen do it regularly (though poorly) when they try to run around a corner to kill one target only to get "stuck" on the wall with half a dozen other mobs blocking their way.
The difference between you and the hench is that you have the brains to switch targets and kill the monster that is in your face instead of continuing to try finding a way around. More distinct, since you have effectivly blocked the mobs from your team, you are in a position to
keep them from your team. Thats what "tanks" do.
Warriors, on the other hand, bodyblock
and use their powerful weapons to kill those mobs quickly and decisivly. Accepting that they are not invulnerable, warriors seek to end battles quickly by overpowering heals with the highest DPS (damage per second) in the game. They use Knockdown and snare skills (ex: Hamstring) to cripple their targets if and when agro breaks, so that smart team members with low armor (like your squishy monk) can kite (run away) from the thing that is killing them.
