First I have all 3 campaigns. Second I have a lvl20 Monk in Tryria and can travel to either Cantha or Elona. My monk has completed the GW campaigns and not the other 2 yet.
My question is real simple I am sure. I want to try Dervish as my secondary with my monk. How do I go about doing this?

Not sure, but if you do Factions, you have to get to Senji's before you can change professions. In Nightfall it's the Sunspear H.Q. (or what ever it's called). Someone correct me if I'm wrong.

pretty sure this is the wrong forum for you, but you will need to either:
a) travel to cantha and complete the missions 'Vizunah Square' and 'Nahpui Corner' to get you to Senji's Corner to change secondaries. (i believe that if you have NF you can get NF secondaries here as well)
b) travel to elona and complete the mission 'Consulate Docks' then do the primary 'Hunted!' to get access to Sunspear Sanctuary, wherein there will be your Command Post with another secondary trainer.

If you're a chapter one character, brace yourself-you're in for a crappy ride. Go around the outposts in the crystal desert-I can't remember what they're called, but specifically the OUTPOSTS, not the MISSION areas.
Talk to the ghosts, and if you've ascended, you'll get some quests called 'Path of the (Instertclassname)' or something along these lines (In my defence it's been about a year since I've last done this).
Beat the quest, take the reward and you can now change to that class for your secondary.

You have to do two things to get a Dervish secondary
1st: Ascend, if you haven't done this already: Do the three crystal desert missions and defeat your doppleganger.
2nd: Go to the Great Temple of Balthazar. Buy the secondary profession of your choosing for 500g.
