Is there an in depth chart that tells you what items to get to make armor, weapons, ect... ?

I cant think of items off the top of my head so I'll use numbers for an example.

1 + 1 = 2 sword [5-6 damage]

Yes, Guildwiki has a ton of info on weapons, armor, collector's items, gold, missions, quests, etc., etc.

gw.gamewikis.org has an article on just about any type of armor out there, including what it looks like, how much it costs to make, what materials you need, and what parts you can dye. On the homepage for that site there is a link to armor, which is listed by: profession, where you can get it, what it does, and prestige status (like standard armor vs. obsidian armor).
