A knockdown knocks you down. When you're knocked down you are interrupted, even when under Mantra of Resolve or the like. While knocked down you can't use skills with a cast time, though you can use shouts, stances and skills with instant activation, and you can't move.

Although I also like Dervishes. I was leaning toward a Warrior/Dervish combo for the Dervish skills and the Warrior armor.

Don't. Generally use skills from your primary profession and only one or two skills from your secondary profession, like W/E's who take shock for an unconditional knockdown, W/Mo's who take Mending Touch for lots of condition removal, or R/Mo's for the same mending touch.
In general skills from your secondary are fairly weak on a warrior because of his limited energy regeneration. This is also the case with a W/D. You won't have enough energy to use your Dervish skills effectively. D/W is a much better choice, and then take Dervish skills and Wild Blow, which owns on a Dervish. Or be D/Rt with Extend Enchantments and Sight Beyond Sight. If you want to be a Dervish, be a Dervish primary.

Elite skills are obtained with a Signet of Capture with which you can capture them from a boss that has that elite skill, or can be unlocked for your PvP characters by buying them at a priest of Balthazar for 3,000 faction.
They are elite for several reasons. Mostly because they're more powerful than their non-elite counterparts (compare Energy Tap and Energy Drain: the latter steals more energy and has a shorter cast time, or compare Echo and Arcane Echo), because they would be too powerful in combination with other elite skills (Hundred Blades was made elite because it was supposed to be too powerful in combination with Illusionary Weaponry), or because they fulfill a role that doesn't fit that line (Zealous Benediction wouldn't be great if it was in Healing Prayers. It's so powerful because it allows hybrid Protection Monks to free up attribute points because they don't have to spec in Healing)
Some elites seem to be elite for no reason at all, such as Wastrel's Collapse which fits in none of the above.

They have access to all skills from their primary and secondary profession.

Yes, but you can't spec any attribute points in the primary attribue of your second profession, so some skills won't be very effective. For example, if you're a Me/E you could use Aura of Restoration if you wanted to, but it would only provide 152% healing per spell, as opposed to the up to 417% you could get as a primary elementalist.

It means a skill will do 1 dmg if you have 0 points in the attribute, and 10 if you have 12 points in it.

55 monk is a monk build with 55HP, Protective Spirit and health regeneration skills, also referred to as 'Invincimonk'. You can farm certain areas without enchant removal with it. A search in the monk forum should give you enough information, as well as
