Yes, monk farming has been nerfed - mobs runs from more AoE damage including SS now. Though I rather suspect that 55monk/SS necro dual is still quite doable. I've never farmed the UW (nor ran a 55 monk) and decided the last free access weekend to the UW was the time for me to give a 130hp Dervish a whirl. It took me about 20 minutes or so to learn to "dual farm" with me (the 130 hp Dervish) and Olias (my SS necro hero). Found it too boring, though quite profitable, and quit - back to my normal farming. Since I did it with an inferior build I assume that the better one can too.

I what respect? For just playing - close to Prophecies if not above it. Nightfall+heroes > prophecies, Prophecies + heroes > all. Since Heroes are currently Nightfall only it was worth it for the added fun through prophecies.
Farming - eh. For the prot spirit builds MANY more places to farm and the 130 hp dervish adds a new class in there. For more casual farming, not so much - prophecies is the only place that has a large enough level progression to find a place to farm. I enjoy aspects of all of them so I like both, though Nightfall *definitely* added enough for the cost.

Hasn't really changed that much - your old builds most likely still go (as long as you were around after the first AoE scatter). The only thing is that we now have a few Dervish farming builds. For many (myself included) they can do both the prot spirit low HP farming and the Warrior "Tanking" type farming - which makes them my personal favorite class. However, they take more attention than a dedicated 55 monk or a warrior tank farming build (which balances the fact they can do both).
Your mileage may vary - that is my take on the world as is now. I can not say if disagreements come from being better than others, or have never seen how well the classes can work. In the end, I suspect that the addition of heroes will be worth the cost and there is enough after that to be quite worthwhile (treasure chests and the money from trade contracts is quite nice). That is true even if you mostly farm.
