I know that death levelling is for dires and letting the pet die and then go farming is for hearties, but how can you specifically level a Elder pet?

Post in questions and answers next time, but have you checked wiki? Guides on there on how to level for hearties, and dires, maybe theirs one for elders.

I do love the wiki for a lot of things, and the wiki has a good overview on the subject of pets, but with all due respect, there's a much more comprehensive source on this very forum, A guide to pets, by Jenosavel and Epinephrine, and they say this about leveling to elder in their section on Pet Evolution and training:

Elder pets are the balance between aggressive and defensive, and can be obtained by following first one evolutionary path, then following the other. However, since it is much harder to follow the Dire path it is recommended if you desire an Elder pet that you follow first the Dire training until you have an Aggressive pet, then switch to the other style of play. It is faster to raise a pet to 11 than from 11 to 16, and should you allow too much damage to the pet in the first stage you will be able to start afresh.
They also mention a number of pets that you can charm already in elder state, such as the Elder Wolf, Black Moa, Black Widow Spider, Elder Cranes, Elder Crabs or the Elder Crocodiles, and all the details about where to find them and how to charm them are there in the guide.

For 'best chance' at elder: just death level up to level 11 and then charm. /petname reset to ensure that it is indeed at aggressive. Then get yer spiffy new pet ganked and drag him around with you.
Know that it won't be 100% chance of getting elder, but its pretty close. You can always resort to charming elder spiders, wolves, cranes or crocs(if really lucky), crabs, and the uber1337 black moa is essentially elder as unevolved.

Gang-killing.

I refer to it typically as "mobbing" or "swarming", personally. If I'm feeling like making an obscure reference to a game I NEVER played, I call it "zerging".

What they're saying is that once you have an aggressive pet.... you should then go around getting it killed by mobs, resurrecting, letting it die again, resurrecting... etc.

I'd recommend just catching the Black Moa though...

In GvG it is sneaking off to kill things away from the combat. A ganker (or gank team) typically goes into the enemy base and kills the NPC support, providing an NPC advantage later.
