Warriors have the highest possible DPS in the game. Assassins (Factions-only) reduce health extremely quickly but can only do so sporadically. Dervishes (Nightfall-only) are slow attackers but compensate with a high-damage weapon and the ability to hit multiple enemies with one swing. Warriors are the "archetype" if you will, and are very well-balanced for "spiking" or "pressure," in my opinion.
Elementalists may seem like the highest DPS characters, but Area of Effect spells in this game are fairly weak unless you have multiple characters running them, and have long recharges and high costs, reducing effectiveness. In high-level PVP, Elementalists are used mainly in a support role.
Paragons (Nightfall-only) can have very high DPS, but their spearchucking attacks can be dodged simply by moving around. Their high armor and party-buffing "Chants" and "Shouts" are often used to supplement the team for either damage or healing.
Necromancers are not high DPS at all; they're more like shutdown and annoyance. Mesmers are the same way, except that Necromancers are currently focused on slowly whittling away the enemy whereas Mesmers just disrupt and screw with it.
Rangers are most often used in PvP as high-degeneration and disruption characters. While their arrows don't do a spectacular amount of damage, the Health degen ability of skills like Apply Poison and Burning Arrow makes them ideal for that kind of purpose. Rangers are also very well-equipped to interrupt enemies.
Monks are the healing class. Plain and simple. They have some paltry damage skills, but these are almost never run on a primary Monk. Monks are used to make the health bars go up and to prevent the health bars from going down. "Protection Prayers" are the most-used skills and have such effects as decreasing the amount of damage an ally can take at one time, negating the next damage against you and healing you for that amount, and healing an ally every time they take more than a certain amount of damage.
Ritualists (Factions-only) are quite unpopular in PvP at the moment. They're used fairly often in the "Heroes' Ascent" PvP type, but there have been numerous complaints that due to the Ritualist's mechanics, all it can be used for is a gimmick. As such, they are looked down upon by many of the more well-known PvPers.
The preceding information is subject to change at any time. Also note that I attempted to put the language into something someone who's never played GW before can appreciate, so some of the generalizations may be somewhat off and intricacies may not have been explained. However, the above information is, in my opinion, a solid description of how each class is used in PvP at the moment so that you may make your decision accordingly.
