1 full set of Droks Druids... plus 5 other pieces when i need to alter attributes slightly.
2 full sets for warrior, Primeval purely because i needed a helm with +1 mastery instead of my Knights Helm w/ +1 Strength.
Ele, Mesmer, Necro and Monk have 1 full set plus a 55 set.
Rest just have 1 set.

Cursing 15k Canthan (and I don't mean standing there throwing insults out either)
Blood Spiking
my ranger has:
Beast Master set
Trapping set
General PvE set 15k primeval
my monk has:
55hp set
General PvE Set
Scalp tats for Smiting/Healing/Protecting/Divine Favour
my mesmer has:
15k enchanters for general PvE
differnet mask for different uses
my warrior has:

I don't have completely different sets, but do have two or three pieces from the same set on each character, with different runes, so that I can swap attributes around, depending on the build's requirements. For example, my Ranger has three extra pieces from the same set which can be swapped out for either max Marksmanship, for Running, or for UW Trapping.
A long time ago, I tried the whole having more than one set approach for my Necro, but it took up so much storage space, I gave that approach up for my other characters. It's kind of fun trying to figure out which Rune/Insignia combinations on which pieces can be swapped out for most efficiency, requiring the least amount of armor. I usually carry one or two extra headpieces, a spare set of gloves and/or a spare set of boots.
Besides wanting a different look, the one build I can think of that really requires a completely new set of armor is the "55 farmer" and it's variations.

I have ALL for looks-they are all gladiator (energy)+ set... i wish i could change them now...
