I've dyed my female Mesmer's Courtly Hose purple, but the icon in the inventory is still green. What can I do to change it?

Most likely nothing.
I don't ever recall Inventory Icons reliably, if at all, changing to reflect dye choices. There might be items that do, but it would be a matter of whether some bit of detail oriented code was present or not.
I'll have to observe a little more closely to see if there are icons that reflect dye changes.

most armor icons change with dye

It is a bit strange though, because all my other Courtly armor pieces have their inventory icons dyed purple, with the exception of the Hose.

To be honest, no. There is no setting you have control over that says how things like icons are displayed when they are dyed. Did you buy the hose later on, after you had purchased the other items? That would at least explain the difference.

I bought the gloves and hose yesterday, and the mask, attire and boots the day before.
Ah well, gotta get used to it I suppose.
