As a general rule, weapons that do elemental damage are good against melee fighters and casters other than elementalists (and certain mesmer builds); weapons that do physical damage (slashing, blunt, piercing, etc.) are good against rangers and ele's, since those profs have extra armor vs elemental damage. Keep in mind, too, that many profs have skills which counter various types of damage, either for the caster or for the whole group (within a certain area). That's why, as quickmonty says, you should have a variety on hand and use the quick-switch feature as needed.
As for shields, the standard is + health and - received damage (while enchanted/hexed, in a stance, xx%). Shields that have condition duration reductions (poison, bleeding, crippled, etc. reduced 20%) or +AL vs various types of damage (piercing, lightning, etc) can also be useful if you know what type of enemies you might expect to encounter.
