Here is my idea if it stays as an 8 man group.
Me and my girlfriend will have typical barrage/pet skills Ranger/Ritualist. Barrage, savage, distracting, splinter weapon, favorable winds(maybe), charm animal, comfort animal, res.
Her heroes will be 2 r/me. In place of splinter weapon and favorable it'll be power drain and leech sig.
My 2 ranger heroes will be r/p with stand your ground and go for the eyes.
Then the 2 monk heroes is what i'm having trouble with. I was wondering if maybe lod + restore conditions. Maybe 2 healer monks? Or perhaps a new idea I was thinking about.
My prot hero could be life sheath(E), reversal of fortune, protective spirit, gift of health, hex removal, power drain, leech signet, res.
Then hers could be healing with the elite Healing Light which gives you energy back if ally has an enchant (which since both ai tend to spam skills will be tahlkoras protective spirit or life sheath).
So what are your suggestions?

Some kind of melee or MM is still gonna be needed besides the pets...all Rangers aren't gonna cut it against whatever enemy melee there will be.

Take out one of the ranger heroes for a minion master, preferrably one of the R/Mes, as minions get the critical bonus from GftE.
edit: You can make the MM carry Leech Signet and Power Drain, it works quite well on a hero MM bar. I have used Animate Bone Fiend, Vampiric Horror, BotM, Dark Bond, Leech Sig, Power Drain, Signet of Lost Souls, Res Sig as a basic hero MM. This build was during the first Soul Reaping nerf; the hero never had energy issues.

What should I set up for the lod/protects? Also, I was figuring if needed i'd take out a ranger to put in a mm. If I do should I almost forget about bone fiend and just stick to bone horrors/ nightfall variants for a meatshield wall? Or do I still put in the plain old horrors and fiends even though fiends won't tank much.
