Most of the time the NPC opponent will start by casting the glyph that prevents his next spell from being interrupted. You should start off with the big damage spell (most polymock pieces have a 600 dmg spell), or the one that puts degeneration on your opponent.
Now he will try to cast one of his heavy damage spells. You can't interrupt it so use your blocking skill (Watch Yourself icon). Continue by either using your glyph (the one that prevents interrupting) and then following up with your other big damage spell, or spam your 100 dmg skill until the opponent uses his interrupt, and then use the big spell. Watch out for his 2nd big dmg spell and try to interrupt it.
At one point it's likely you'll both be spamming your 100dmg spells. It's better not to waste your interrupt on those, but rather wait for the big spells. Also I think it's better to let him use his glyphs and then interrupt the spell that follows, cause he spends more of his energy this way.
Watch your energy and plan ahead how to spend it best to get to 0. Ideally you'll get down to 2 energy and use your blocking skill while you recharge. If you're under 50% hp, you can also use the glyph in the 8 slot and the 100dmg attack, then recharge.
That's pretty much what I did to beat them all, after the initial crushing defeats you'll get the hang of it
