Go W/R, and pump everything into Wilderness Survival and Marksmanship.
Grab read the wind, apply poison & troll unguent.
Drag the Griffon around the corner so it gets stuck, then just plug away with poison arrows.
The Griffon doesn't use any heals, so it'll die over time thanks to the poison.

This is NOT a build....... I don't even think I'd go so far as calling it a guide.
But it did work for me.....
It is not quick, because it depends on mr. griffon doing something I have seen him do EVERY time I have stayed alive long enough. And, staying alive was not hard to do so long as all you wanted to do was watch him put up spirit after spirit after spirit.
He WILL get stuck on something.......
Put 8 points in strength. this will bring your health up to 700 give or take depending on your rune setup. the rest i put into restoration and channeling.
bring Signet of Stamina and hit it as soon as you enter.
Agony Rejuvination and Pain, Vampirism are good.Since I already had 'em, I brought VWK and Vengeful Weapon.... and Mend Body and Soul.
I used a restoration wand that gave health and energy (but lost a pip of regen) a focus that gave as much energy as i could find without losing another pip. Wound up with around 55 energy and only one pip of regen (Hint; don't zero out, you can switch out to a higher energy weapon set but it will be a while before it gets up to zero with alternate set........)
throw up as many of your spirits as you can and then back off. Let griffon move to somewhere else so he can put his spirits up.
Just outside of range of his spirits put up a perimiter of yours.
he will hafta come through them as he wanders and if they are still alive will take some damage.
I have been told he has NO health regen but he does have some kind of self healing because i have seen his health drop and then return to full.
try to contaminate as much of the area as you can with your spirits.
keep track of him and wait until he sticks himself.get as close as you can without being hit by his spirit's attacks. You wanna work your way in till his spirits and your spirits are battling.
From then on it's just a matter of switching out to high energy regen set (2 whole pips) and rebuilding your energy and recasting your own spirits as his spirits and eventually himself go down.
Vampirism is a Sunspear skill so it works better the higher your sunspear rank and be sure and display your sunspear title.
Hope replying to my own post isn't such a violation as to get it banned and it helps some folks.

Yeah it was a bloody annoying piece of crap, damn spirits. Also he likes to run away every now and then into his spirits (if you didn't interuppt them before) which own you if you get close
I ended up beating him by lowering his health with ripostes then he stopped attacking so I had to cover myself with Bonetti's while I slowly whittled his health away before I hit him with Final Thrust

Bring interrupts, snare his ass, sword duelists using ripostes will own him for free when he gets around to actually attacking. If you're part mesmer, the unnatural signet is NOT as good as you'd think...
