I am planning on getting 1 (One) 8800 GTX. My question is...

What is the max resolution I can run on 2 monitors.

Monitor 1 to be a 24" or 27" Dell Widescreen. I am leaning towards the 24" due to the response time.

Monitor 2 to be a 19" Samsung 913T (Max is 1280x1024) or a second 24" Dell

I want to run GW max'd out on graphics.

Assume that the rest of the system is uber and up to the task, ie power supply proc, MB and mem.

Well i run two 19" screens, both fairly basic and cheap and i can run 1280 by 1024 easily. Using my graphics card its possible to have diffrent resolutions on diffrent screens.

By the sounds of it you'll be able to run 1280 by 1024+.
