Gap between attacks?

I was wondering when sins are attacking is their some gaps if any in their attacking? They seem to be attacking pretty fast so I was wondering if their were moments they weren’t attacking? Also what if they had critical agility on? Is it a long chain of constant attacking until the foe is dead, or no?

Well depends what you mean...if you press c space, or are queuing attack skills, they will always be "attacking". ( this is easily testable with Wail of Doom )

Both, if with and with out skills. The attack speed is a bit slower when using skills in a combo, so I'm guessing theirs a gap between each attack?

Auto-attacking gives you a chance of double striking, which gives you more DPS, the use of attack skills, however, doesn't have that chance. You attack once with Lead and Offhand Attacks, and twice with Dual Attacks.
Daggers have the same attack speed as swords and axes, but on average, they attack more, because of the double strikes.

yes, crit agility will be on you as long as you are in the status of "attacking" that happens as soon as you hit space bar at the foe.

It seems the OP is confused about autoattacking...it takes time for you blade to go back and forth towards your foe...but for the game, it counts as attacking...

Critical Agility is a form of IAS (Increased Attack Speed). The skill makes you attack 33% faster (so you'll attack 50% more than usual), immensely increasing your DPS (Damage Per Second), yes.

Another question, For insignias that require to be attacking. Do you start attacking when you start swinging your weapons towards you foe or only when you hit them?

There is no gap. If you have chosen to attack and are not moving and not using a non-attack skill, you are CONSTANTLY in the state of attacking.
