The Platinum Edition is great for a new player. It gives you Prophecies, which has a very relaxed learning curve and gives you a lot of skills for free. It lets you develop characters and get used to how the game works at a nice easy pace. Plus with Eye of the North also included, you get all the latest areas with some really great sideshows to enjoy.
Later on, you can add Factions and/or Nightfall to your playing account which will give you the other professions and regions.

Good for you! The Warrior profession is a core profession, which means it's available in every chapter. It's also a great profession to learn the basics of the game as it's a very straightforward profession to work with and very forgiving if you make mistakes in combat.

Yes. Every profession has both a primary and secondary profession. You choose your primary profession when you create a character, and that determines your basic appearance and the kinds of armor that you can wear.
Early in the game, you can choose a secondary profession. This gives your character access to all of the skills and almost all of the attributes of that profession on top of everything that your primary profession can do. You can use your secondary profession to cover for your primary's weaknesses or enhance your primary's strengths. You can also change your secondary profession when you get far enough into the game, so you can keep on adapting to new challenges by experimenting with new profession combinations as well as different skill combinations.

Yes, you can. You have the option of creating PvP-only characters that start at level 20 with a full complement of attribute points and immediate access to all skills and equipment upgrades that you have unlocked, as well as max armor and weapons. However, these characters can only access the PvP areas of the game.
Also, once you raise a roleplaying (PvE) character to level 20 you can use those characters in PvP as well as PvE. Although bear in mind that you will want to make sure you buy max equipment for these characters before you take them to the PvP arenas.

Yeah - only spend money on the things you need, rather than the things you want. Regular max equipment tends to be very reasonably priced (you can get flashier versions of max equipment, but they're no better than the cheaper stuff even though they're far more expensive), and there are collector NPCs who can give you equipment for free too (make sure you use these collectors - it'll make things much easier on your virtual wallet)

Why not try both? You will always have a minimum of 4 character slots, so feel free to experiment with the various professions to see how you like them before you settle on one to be your main character.
