Rotscale isn't that hard if he's by himself. Yeah, I'd say that Willa is fairly hard without using daze on her. Glint, most definitely.
Cantha? Any of the elite bosses or Shiro (if you are facing him 1 on 1)
Elona - Mallyx, Shiro, Lich (again both Shiro and Lich if you face them one on one)
Eyes To The North - Duncan or Magi. Although some people find Blarp a tough guy to beat too.

glint I have found to be ridiculously easy regardless of NM/HM (just me lol)

PI makes most things that much easy now!

Tyria - Rotscale. Glint is easy. At least in NM. Rotscale scares me even in NM.
Canthan - Shiro I can beat easily and never really had a problem with him after I learned what his skills were and how he operated.
Elonian - I've hears some bad things about Mallyx. So, even without ever facing him, I'm still picking him as the big bad.
Not sure why everyone wants to daze her cause I find it more bothersome than just doing Chocking Gas/PS. But that could be cause I'm taking into account the ether seals and the Ele boss that uses Glyph of Concentration.

Glint is super easy, even in HM with heroes and hench, as long as you take the right heroes and hench with the right builds. Killed her on my Ranger in HM with only receiving her wanding attack damage. Not one single spell was cast by her.
Tyria = Willa, as even Daze won't help a whole lot. Its gone in half the time due to her being a boss, and she has CoP.
Cantha = The Afflicted Maaka - not truly hard, but I have not seen a boss kill someone faster than him.
Elona = Bohdabi the Destructive - never saw my death coming when I saw him use Deathly Swarm. I was a Ranger, and figured 80% health was enough to keep me alive with elemental damage reduction. Nope, he hits hard, and multiple targets, and don't forget his group.
EotN = Borrguus Blisterbark - Searing Flames from 4 monsters, 1 being a boss, is not fun.

Tyria: nothing. there are no hard single creatures in tyria, but mobs of hydras and stuff are a pain.
Cantha: Orosen. you have to fight this guy on a bridge and 1 spirit rift can easily take out all of your henchmen.
Elona: Nothing ive seen. apparently mallyx is hard, but i cant be bothered to grind my way to DoA
EOTN: Not finished, but big destroyer mobs are a pain.
