I was thinking to use epidemic while training my pet to dire, but would that count as my doing the damage?

I heavily doubt it as Epidemic, and even conditions like Poison, Burning, and Bleeding do no "damage" as far as the game engine is concerned.
By far the best way if you want to ensure you get a Dire pet is to death-level it.

Death leveling means making the pet aggressive to you and having it kill you over and over. The pet will get experience and eventually level up. Once it hits around level 15 charm it and it should be dire.

I wouldn't risk it, if it counts as your damage the pet will not turn out dire.

Death lvl ftw. Do this while you sleep/do homework/party and you will have a dire.
