Just wondering if some of my ideas for the use of this skill are applicable.

First of all do you think that using it in conjucntion with Acrane Larceny/Thievery, Arcane Mimicry, Inspiried/Revealed Hex/Enchantment could be effective?
Essentially shutting down the enemy bar, stealing it and using it against them. Since with signet of illusions you can effectively use any spell that gets sucked onto your bar you could become a "pretender" of sorts, using any skills you pick up, and using them effectively thanks to SoI.

Also is it a good idea to use it to "over-extend" your att. points? Maxing out illusion but using skills from other attributes you've "neglected" or couldn't max out?

I just very much like the possibilities I see with this skill, and hope some of my ideas can actually work as well as they do in my head

I would say yes to an extent maybe one or two stealers on your bar, but you need to have something that is reliable to fall on. In Ra it is always it fun to steal enchantments. If your build just about stealing then your effect is less.
