Does it stack? if I get 2 of them does that mean I can get +80 armor if I have 4 enchants on?

The effects of the insignia apply to ONLY the piece of armor it is on. That being said, the +5 armor bonus DOES add up, based upon the # of enchantments on you:

# of enchantments | total armor bonus
1...........................+5
2...........................+10
3...........................+15
4...........................+20

Basic Guild Wars Mechanics... Each individual armor piece has a chance of being hit. Armor levels are not added together, but rather counted when an individual piece gets hit. Two would mean you have +20 armor on two separate armor pieces.

It only does different damage if you have different armour on those parts.
