Seriously. Mending Touch, as boring a choice as that sounds, is so amazing for real life application: get rid of any disease, illness or negative condition (fatigue, maybe even thirst or hunger); stop any bleeding; cure any deep wound (internal of some sort, possibly including broken bones); cure any burns and even put yourself out (lol); get rid of any poison, bad food, anything eaten or overdosed. Add to that a health boost anytime you do any of that and pretty much anything can happen to you short of catastrophic instant death and you'll come out just fine. Or, anyone else suffering from anything. Was my pick too.

the only problem about having rebirth be your "skill of choice" is that you would have to worry about the person being rezzed ontop/inside of you (like they do in-game).

I'd prefer restore life if I was rezzing. It is more "god-like". Putting your hand on them and them coming back to life with most of their health and energy. That would be amazing.
All you would need is a chorus in the backround singing "holy-intervals" to make you the God Walking Amongst Mere Mortals...
