I want to build a character for end-game pvp. I was wondering whether to go W/E or W/R. If you could list pros/cons or some links to builds that would be greatly appreciated.

First of all, for future reference there is a PvP section of the forums that would be more fitting for this type of question.
Now...
I would say W/E by far because of the utility you get. Currently one of the staple warrior builds requires you to be an W/E:

You can also spec into earth instead and grab [skill]Grasping Earth[/skill] which can be an effective snare in case you don't want to invest in a cripple. You could also invest in skills like [skill]Conjure Flame[/skill][skill]Conjure Lightning[/skill][skill]Conjure Frost[/skill] (there is no Conjure Earth)
W/R isn't a bad choice if you want to run IWAY. IWAY is a build that relies on a dead pet to trigger [skill]"I Will Avenge You!"[/skill] though I would still recommend W/E.

I would say it doesn't matter.
You can change your secondary profession at any time later on in the game (or if using a PvP character, at any time). If you intend to get into high end PvP with a PvE character, this isn't going to be an issue.
