If I enable and load multiple weapon sets, do those extra weapons still occupy inventory space? Example, if I have 4 bows equipped to the different sets, do those other three bows I am not currently shooting occupy inventory space, or are they akin to an offhand item such as an ankh with two-handed weapon, which is useless but does not occupy inventory space?

They still take up a space in inventory. They'll have a little star or mark in the upper left hand corner of the inventory icon to let you know it's in a slot.

One thing: I generally "hide" offhands or shields that I don't want to lose by equipping a staff and then equipping the offhand or shield. It has the cannot use sign over it, but it doesn't take up a slot in my inventory, so I won't sell it by accident.

Yep. That's what I do with my bow and a flame artifact, for instance.
