Sounds to me like your main concern is, "Will I have lots to do to keep me occupied for a long time?"
If so, the simple answer is yes, but again I'll stress like I did before,
if you don't rush everything.
You can absolutely wake up one day and say to yourself, "Boy I'm lazy today and don't want to hurt myself doing something severely time consuming!". I do that often!
The beauty of Guild Wars is there are things that can take a long time to do (Elite missions to name something off the top of my head), or a Dungeon in "Eye of the North". There are things that can take as little as 10 minutes as well; A simple side quest for example.
There's a wide range in this game. You can pick it up and play it for an hour before work, or school, and put it away for later. You can also spend hours upon hours at once and work away at something far more challenging.
Easy simple quests, Masters quests, Primary quests, Missions. You can explore if you want, craft your weapons, design new builds, get into some PvP if you like such as Guild vs Guild battles, engage in some trading, work on a title if you like one.
The main point of the game is up to you. If you want to quest with people, that's an option. You can go alone too with henchmen and heroes. If you want to dive into competitve PvP, you have that choice. If you want to get into the trading market, that's an option.
I think the point we're all trying to make is that yes, you will have plenty to do.
If I can add a suggestion, if you can find someone on these boards with a Trial Key for one of the 3 chapters, you can download the client from the Guild Wars website and you'll have a 10 gameplay open window (I think it's 10?) to give it a go. Or, if money isn't much of an issue, the first chapter of Guild Wars is very much affordable.
