Okay so after taking a long break... I totally forgot so many things!
So... I decided to create a new character, but I can't seem to make up
my mind in which class I should work on.
I like playing a class that isn't too complicated... but somewhat powerful
at the same time. Could you guys suggest me a class I should play?

Really, warrior isn't complicated and can be played even if you are not paying attention to your game (at least at the early stage of the game.)

Warrior is the very least complicated. Other classes require some thought. If you want to go straight to the hardest, then go Monk, Sin, or Mesmer. Many would say sin doesn't require thought, but if you don't want to die constantly, like most sins seem to do, it does .

Try a warrior if you want to get your bearings again, they're straightforward and can be very powerful damage dealers when you get good with them. Alternatively, ranger is another class that's not too difficult to manage but can become quite powerful. If you'd prefer a caster, elementalist is probably the most straightforward of the lot, and there's obviously enormous damage potential there.

Warriors are easy to play as, and they're very accepted in groups, just because all you have to do is run into the enemies with your nice high armor. :P
Another easy one to play would be ranger, because although you have only decent armor, you get to sit at the back with a bow, shooting everything from a distance, and then activating your blocking stances/heals when enemies come near.
And yea, the most difficult class to play would be mesmer, but the most difficult class to play "well" would probably be assassin.

Paragon! with ursan dominating the pve field, paragon makes the best ursan (infinite energy with leadership, high armor, and useful when not in form)
They can be powerful, have high armor, and lead henchmen very well.
Simple to play: they have the fewest skills to choose from, and most of them are decent.
Also they are very useful in pvp with their shouts and chants having very few counters and 0 removal.

Monks are fun to play. They're almost always needed in a group, so finding a party is pretty easy. Although I enjoy playing as a monk, I find playing as a elementalist pretty fun as well.

Paragon - pretty interesting to play as long as you don't run the imbagon build 24/7

Well, it may help if we know what you prefer more of. That way, you can narrow it down more.
Are you the type of casting or melee? Close range or Far away?
Do you like to use the skills in a particular order or like the ones that require timing?
Do you like to focus damage on one person or deal damage to muliple people?
Do you like to have control of more allies, or simply have one ally that attacks what you attack?
Do you like to support and prevent damage to the party as well as provide energy for them?
Are you lazy and want someone else to do the attacking for you?
I can't think of more profession narrowing questions, someone go ask more. xD

I say Paragon as I never get bored playing it. That is me personally but I do know others that think Paragon can get very boring.

Actually, Mesmers are quite easy - in the beginning (in Proph, up 'til Yak's Bend, IMHO). Early on the mobs of enemies aren't so huge that you can't spread around [[Empathy], [[Backfire] and [[Conjure Phantasm], with a [[Chaos Storm] or two in there (mainly when you've gotten surrounded and want to scatter them), enough to weaken them enough that your henchidiots can take them out. After that point mobs tend to be too large and individual members too tough to take out with such basic tactics. This is when advanced Mesmer techniques start being necessary and the class' learning curve turns from a gentle slope into Mount Everest...
As for Assassins, well, they're fairly easy as well at most points of the game - you just need to learn when to back off for a little bit to heal or apply your Enchantments and such, not get out of range of your Monk, to switch targets and not just keep trying to hit that Am Fah Assassin who's used Flashing Blades, etc...
[Barrage][Called Shot][Sharpen Daggers][Critical Eye][Way of the Master][Heart of Shadow] and either [Death's Charge] or [Viper's Defense] or a [Signet of Capture], depending on my mood, has served me quite well recently, especially in the crowded streets and sewers of Kaineng where the enemy tends to clump. Maxed out 12 Marksmanship, 14 Critical Strikes (11+helm+major rune), and the rest (6?) going into Shadow Arts has been what I used. Sadly, he's having an easier go of it than my Barraging Ranger (who hasn't ascended yet, but will be going /Rt as soon as he can to test out Splinter Weapon).

I would say ritualist but between Item spells, weapon spells and binding rituals, I know it can be a different language for most people. I'd go with paragon.

Personally, Paragon is a definite go. Not even taking into consideration that Imbagon is arguably the best build in the game, They are VERY straightforward and easy to play, provide very good party buffs and have a DPS that rivals warriors.
Oh, and ridiculous energy management, perminant IAS and ranged, which means you don't be taking much damage at all.

Necro makes PvE ezmode. At lower levels elementalists and warriors (unless you're set up for tanking) might seem like better damage dealers, but once you're fighting lvl 28 mobs in hardmode, necros outclass anything.

It depends on what you want to do in the game. Solo Stuff-Necro,Monk,Rit, Ele. If you want to go Party-Paragon,Nuker Ele, Warrior Tanker etc..., If you want to be the Ursan-Ele,Necro,Paragon. We cant tell you what you want to be. It pick you want be confrontable with is best thing you can do. If you cant make your mind. Might I sugguest doing Zashien Challenges with different professions to get a feel which one you like the best. Once pick the one you like delete the PvP ones and make a PvE character profession you liked in the Zashien Challenge.

Ele's and Necro's are the most fun to play and really least complicated. Mesmers, rangers, assassins on the other hand are a complete phail imho. I'd never really play one of them though I have one of each as a mule they do make great mules for storage.

Any character will do , just get EoTN rank up your Norn title track, and you can UB all areas in every chapter, it even saves wear on your keyboard as you only need use 1234.

I would say a Curse Necromancer spamming SS and Enfeebling Blood, Reckless Haste and Mark of Pain is not that difficult but very effective.

In most of the PvE environment, all classes are acceptable. Just play a class that you will enjoy. All classes aren't easy or hard to play, they're just got different rolls to which can contribute the team most.

Just try out each of the professions you don't already have in a place like Cantha or Elona (storage for gold and drops, you see).
I'd say Warrior or Necro personally, as they are fun, fairly simple and can do large amounts of damage (differently, mind you). Female Warriors are fun to play dress-up with as well (end shameless plug).
However, make a Rit.
Just do it and see how much fun they are, plus the casting animations are great.

Hardest is definately mesmer, and monk (bar HP spam that is used with ursan). Ranger can be similarly difficult, or challenging depending on you're build.
Assassin can be a challenge to use in PVP well, but in PVe its generally quite useless, or using a brainless 12 spam build.

not that simple for pve dude, and have you ever even played warrior in high-end pvp? postioning and all that makes it very complicated.
