I play mostly monk and warrior in PVE and I find that as more and more time passes, I've relegated myself to playing one "general" build in PVE. Same goes for my heros.
I think I find it more of a "hassle" nowadays to experiment with different builds in PVE considering how easy it's become.
So how often do you find yourself experimenting with builds in PVE? Can you even remember the last time you changed up your PVE builds?

It really depends on the area. I normally have a "core" build with one or two skills that I'm able to rotate in/out depending on the area that I'm in.
For instance if I'm visiting an area with a lot summoned creatures, I'll rotate one my spear attacks for [holy spear]. If I'm fighting in an area where the enemy monks like to run away, [you move like a dwarf] is very handy.
So really, the bare bones of my build rarely changes, but my various utility skills get changed all the time.

Depends on the character. My Sassy is generally a spiker, so I don't see a lot of need to change the build (other than swapping out utilities, [Shadow Refuge]/[Way of perfection] for [Assassin's Remedy] against condition-heavy areas, for instance).
The Ranger gets shuffled almost daily, depending on where I am and what I'm fighting, and with whom. For H/H in general campaign, I'll take a Splinter Barrage build, but if I'm partied with sentient damage dealers, I'll go BHA or other support...

the most i change my builds are when doin various farms. as far as general PvE, i was a creature of the Searing Flames cult for so long... i dabbled in Mind Blast for a bit, but found the DPS lacking. Then when i went through GWEN i ran arround with Blinding Surge, which was fun.
Recently though, i am happy to say Ether Renewal with accompanying Lightning Hammer, Lightning Orb, and Blinding Flash; has replaced Searing Flames as my general PvE build. And i am very happy

to Restoration Morrigan, Barrage Jin, and WoH Tahlk;
then to Sabway;
and finally i am now running with my favorite 3 heros: HB Tahlk, BHA Jin, and Jagged Olias.

OP - I hear what you are saying, partly. There are times when I don't really want to deal with builds. But I have so many saved builds by now that I don't have to anyway. I usually wiki whatever I am doing, check out the mobs and read any tips and then choose an already made build based on that.
If that's too much to do I usually go play something else taht doesn't require as much thought. I've been playing Arcanum again lately. That game was so underrated.
Longasc - As far as challenge goes, it isn't always that low. There are certain dungeons that even on normal mode are challenging enough to be engaging enough for at least one run through.

When I was title grinding, I had things like Barrage, Splinter Weapon, "Finish Him!" and Pain Inverter stapled to my bar. Now that I have done everything there is to do in PvE, I'm playing much more experimental builds. It is really very hard to be innovative in this late day, but there is still the occasional surprising skill interaction (eg. triple necro Ether Renewal sacspike, look it up on PvXWiki).

Often. My templates section is endlessly long at this point. Too many skills too few slots lol. I'd get bored with no change, so while there are "standby" ones I use alot (mm, ss, sf ele, earth ele, prot monk) that are kinda utility builds useful (mostly) everywhere, I change often to keep from sleep questingt. My poor mesmer must have an identity crisis I change her bar so often
