I was thinking of making a pvp only char, either a Dervish, Assassin, or Paragon.
Which one is the best?
I want to kill, but I also want to not die as soon as i come under fire.

Well, I assume you aren't talking about "serious" PvP play.
However, of those 3, the one that is most powerful/useful in the meta right now is Dervish.
Now as skills get updated, that might change. The thing to keep in mind is that PvP characters don't have to be perminant (and aren't really meant to be). Feel free to delete and recreate them at any time. So in a sense, you can play all 3.
Sure, you'll lose out on minipets, but coming in this late in the game, the minis you'll get on that slot won't be valuable anyways (always 3 years out of date from the newest ones).
