I want to buy guild wars Nightfall and the store is only selling it in french... If I buy the french version will I be able to change the dialogues and such in English?

Should do, under F11 you can toggle the language options, allowing you to play in Chinese or Bork!

yes, you can change dialogue into several languages, and text into almost as many... you should be fine with a French version.
