The casting time on Word of Healing is 5/4, while guardian is 1sec, but usually i find it much harder to interrupt WoH. 5/4 i suppose thats 1sec and 1/4 (1,25sec) but why is it so much harder to interrupt Guardian, altough WoH camps on 40/40 i still find it harder to iinterrupt a normal WoH over Guardian.

There aren't any skills with fraction casting times over 1. WoH is 3/4, not 5/4, you just read it wrong.

Especially considering that the casttime of most interupts is 1/4 (+ arrow flight time if your a ranger)
For Gaurdian this leaves 3/4 sec for human reaction time + latency.
While on WoH it leaves 1/2 sec for reaction + latency.
Might not seem like much, but thats 33% less time to react + latency.
