I am looking for some statistics (like graphics) of :
- the number of GW players currently (over the world)
- and more precisely, the number of GW players for each job played currently (over the world too)
Do someone know where i can found those informations?

I don't think that you can get those stats from any resource. Your closest chance would be to ask players here on Guru for their info and compile the stats yourself. Maybe ask a mod if you can get a poll posted for country, as well as profession. Even then, so many players have multiple characters/accounts, a simple poll probably isn't going to give you the stats you are looking for - the only thing I can think is to have people here give you their location, characters, and which character is their Main.
I'll be glad to start it though, my main is in bold type:

For the number of players, you could try contacting A-net and finding out how many accounts are in their database.

I was asking cause i know many corporate video games are doing it.
Then I was looking for official informations, ArenaNet or NCsoft did not publish similar ones in the past?
Moreover, when you compare the number of players some months ago (3,5 millions) and the one of the members list GWguru (180 000 without identify only actives people), you can see there is a huge gap.
But your suggestion could be an (maybe the only one..) interesting alternative.

This is one of a few different GW Fansites floating around the 'Net. Not every player knows about these Forums, or even if they do, have signed up here. You aren't going to get the full demographic data that you are searching for from this, or any other GW Fansite.
subarucar had a good suggestion, which is probably the only place you are going to find all of the information you seek. Even then, ANet can still say no. The most I'd look for there is how many accounts have been created since game launch, I doubt they are going to dig much further than that as far as Professions used, or even active accounts.

This is pretty hilarious, you guys actually think you can complie a list of all the people who actively play GW and their professions and locations by posting in a thread? What an epic suggestion. Like 20 people at the most will bother with it and the rest will see it as the waste of time it is. The other 70% won't even bother opening the thread.
As for getting the information from ANET, they have stated before the number of copies of the game they have sold which is about 4/5million I think. However this is not an accurate picture of the number of accounts and active players as a lot of those 4 or 5 million sales will be going to the same account as in people buying all 4 games will be counted as 4 sales, not 1 account. It also doesn't take into account people who have bought the game and don't play anymore.
When asked for the information regarding the number of accounts specifically they have said before that they will NOT release this data. God knows why....

But with the help of the community and moderators (like topics or polls picked, and some "pub" on other main forums) i am sure we can get easely like some hundreds of answers.

But the suggestion of Tyrael_Eveningsong is still valid.
It can be a funny experience but this implies a really good organisation, and the essential support of the moderators of this forum.

Since a lot of us have all 3 games (Prophecies, Factions and Nightfall), that number should be divided by at least 2.
A lot of people have stopped playing since the game was released more than 3½ years ago, and many of those accounts have been given over to function as storage accounts (and extra Xunlai predictions) for other players. Even if we got the statistic for "accounts logged into during the last month", that number would be far higher than the actual number of active players.
By refusing to give us more than "the total number of games sold", Anet is trying to make possible buyers believe their game is more popular than additional statistics would support. As we all know: success breeds success!

I really don't think you would get any meaningful stats by getting people to post in this thread. The number of people who have "joined" these forums (let alone the number who would actually read this thread) is far less than the number of games sold, and even the number of active accounts.
