How come these enemies in Slavers have their actual profession in the target display bar?

Probably because there is a non-hostile Wolf in the central chamber too, fighting with the Norn now and then.

So you can't charm a level 30 pet most likely. Probably something to do with game mechanics :P

There are mobs of crocodiles in verdant cascades and arbor bay that have this as well. I think Arduinna is right in that it has something to do with the game also having an allied version of the creature.
