There's lore that's been put in for GW2 to explain that female Charr have been kept out of warbands and the like, hence why we see none in GW1.
Breakfast Mc Rit's directions are the best source for seeing what female Charr will look like
Male sylvari can also be seen on the GW2 site, as wall as the art book, and various concept art over in the GW2 forum (http://www.guildwars2guru.com/) and other locations
Female dwarves... I follow the Pratchett theory of dwarves in that the females look pretty much like the male dwarves

Since Charr are basically big cats, how could you tell? When you see a cat walk by, you can't tell if it's female unless you check certain areas really closely. It's probably not a good idea to get that close to a Charr unless you are really, really friendly.

And there are feline species where the males and females look different (hell, that's true of most animal species). And Charr are not big cats, they are feline-like.

According to the screenshots, it's quite obvious which ones are female. They literally look like cats, instead of a goat/cat/dog hybrid.
