I used to play Ritualist, for a couple years. Even though I now play Monk (a profession highly in demand, and guaranteed to find a group) and even though when I play Ritualist there are now groups looking for spirit spammers, I still play H/H, or find a discord partner to steamroll the mission with.
PUGs are shit and you're wasting your time trying to play with them. You'll find they do things like accept tanking warriors or "nuker" elementalists. (Hint: the warrior's job is killing things. The elementalist's job is support. This is not WoW.)

Haven't come across much mesmer hate. Only recent thing was trying to get into a couple balanced UW groups. One said "no mes" and the other "mesmers aren't useful here." Groups that I did get in wanted me to play with them again there.
It's pretty rewarding knowing that you're doing more than other players who only see your profession.
Zaishen bounties are pretty easy to get into. They literally take anyone.

I play Monk usually leading HM teams, and can say for sure I never dissed a Mesmer. For most areas, I try to setup the following team composition:
1 Imbagon
2 Monks (myself and another)
1 SoS Spammer
3-4 Midliners
1 Frontline (can be replaced by 1 extra midline)
If it is a Necro, Mesmer or Ele (heck take anyone with 4 pips of Energy regen), it doesn't really matter as long as it deals damage or mitigates some damage. Just bring some PvE-Only skills and your primary attribute won't really break my team.
In fact, taking Mesmers over Eles is actually better most of the times, because there's a much higher chance Ele player will be terribly clueless and refuse to reroll his fire nuke bar.

Your problem is that there is nothing that you can do that another class could not do better. In the absence of a signal indicating that you are more skilled than an alternative player on a different class, you're going to be the last kid picked on the playground.
If you really want to play your Mesmer, the best bet is to find a regular group that knows you're well worth taking despite your quirk of insisting on your Mesmer. Fast Casting is bad in PvE. It's just how it is.

Vloxen adventures!
As I said, I'd keep you updated.
Thus it came to pass that my valiant PuG ventured deep into Vloxen. The group seemed to be killing fast enough, but first desertion happened very early. Someone died and, alas, our Necromancer did not like one of our monks being WoH (nothing wrong with it, I love WoH!), because if both are UA I guess we would rez faster through FS. If it doesn't make any sense neither it did to me, but he abandoned us. Boldly did we go deeper and deeper. Soon it became obvious that our assassin has no defensive skills whatsoever, but he penetrates fast the enemy lines. The only problem was as soon as he reaches his favorite target (usually enemy backline), he died. Often even before he reached his target. I don't think there was a mob that he survived. This is no exaggeration I assure you. But our bold team went further, albeit with 6 players so to speak. Then, our brave no-retreat fight-to-death (usually death) Warrior gave a good tip to our Ritualist: to place spirits more back and not tank with them, so they arent killed first (thus wasting huge dmg potential). Little did our Warrior know (as you may well be aware, warriors are not scholars or psychologists) - that our uber "I cast SoS everything dies" Ritualist could not withstand such horrid criticism. Withdraw he did into the spirit realm and no more was he with us. So with 5 people (plus play dead assassin) we went on and on plowing through enemy ranks. Unfortunately, soon we encountered those minion masters that are difficult to vanquish even by full groups. They withstood our firepower as cliffs withstand swelling sea.
