I just got into the game and had a few questions, I was wondering if their are different items in the different campaigns and If you could pvp if you made a guy on roleplay server. And also If I own all three but I want to do like the first campaign, would I still be able to get the new skills that they added in the other games?

to pvp....yes you can make a pvp character only. it will be a little difficult because you won't have all the skills unlocked. you start out with a limited amount of skills to choose from.
different items? well there are different weapons that drop in the campaigns. You can get different looking armor as well.

1. If by different items, you mean weapons and armor then yes, the skins change from campaign to campaign, but the max stats remain the same.
2. Yes, you can PvP with a Roleplaying character (PvE), but you would need to get him to level 20 first and get max armor & weapons. There are lower-level arenas in some areas, but they are dominated by jerks who equip a low-level character with max weapons and armor and supply him with skills that newcomers cannot obtain yet.
3. You can take a character created in a campaign and (once you reach a port city) transfer him to another campaign. In this manner you can take the same character through all three campaigns and the expansion. You can look up Campaign Travel on the wiki - F10 or Help on menu in the game or http://wiki.guildwars.com/wiki/Main_Page

Note that there are no such thing as a roleplay server.
If you make a roleplay character you start with it as lvl 1 and you need to progress in the storyline and well basicly do PvE.
If you make a PVP character it automaticly starts out as lvl 20 and it can only do PvP.
We are talking different characters and not servers.

You can PvP on a Role Playing character but it would be best to create a dedicated PvP only character. The reason for this is PvP toons dont have to buy armour and weapons, you can create them yourself (the mods which you use however have to unlocked first) and if you need skills you can just use Balthazar Faction to unlock them aswell (with PvE you have to buy everything).
As for different items in different campaigns, the items may have a different appearance (refered to in game as its "Skin") but the basic stats of the weapon will be the same all over, so in otherwords there is no one single, all powerful weapon set. The same also applys to armour.
And finally, for the skills, each campaign will have its own set of unique skills which were introduced with that campaign but there are a base set of "Core" skills which can be found in all campaigns, once you have these skills unlocked you can use them in any campaign but they first must be purchased in the campaign they came from (IE: if you wanted to use a Nightfall skill in Proph, you would have to purchase that skill from a Skill Trainer in Nightfall as Skill Trainers in Proph wouldnt have it, once you've purchased the skill you can use it anywhere).
