I have not been able to tell, except for a few curses that change a mob's health bar color, if my spells are sticking. It would be nice if small spell icons appeared over the target health bar for the duration of the effect... anyways, I am trying to find out if dot's stack... if I cast spiteful spirit (31 whenever foe attacks), and Empathy (19 when attacks), and insidious parasite (41 when target attacks).... am I really stacking 91 damage to the target whenever it attacks (for the duration of the dots) ?

With your example, you'll see an individual packet of damage for each spell. When the foe attacks, there will be a "-31", "-19", and "-41" pop up on your screen (and yes, they stack). Though you can't tell, perse, which of your several hexes are on the enemy at any given moment, the packets of damage showing up should be a dead giveaway.

The only damage you see on screen is caused by you in yellow numbers above the monster you attack. So you should see 31's for Spiteful above enemies head (and adjacent). If that enemy hits you while you have Insideous on it you'll see another yellow 41 shortly after and so on.

the only time spells like that dont stack is if you recast a duplicate hex on the target. for example, if u cast empathy(19) and then recast empathy(19) before the duration is over, you will not get 19+19. the duration will just be refreshed.

Hexes that cause Health Degeneration will change the colour of the HP bar. Any Hex that does not, there will be a purple/pink icon on the right (within the health bar).
Hexes such as the ones you mentioned trigger damage per attack. The damage you notice above the creature is sufficient evidence to show your hexes are stacking.
But yeah, You can stack as many hexes as you like. The only time a hex won't stack is when you "re-apply" the same hex. It merely, as mentioned already, refreshes the duration.

you'll just have to memorize durations. multi-tasking is part of a hexers job, and imo is what makes it so fun. hexes can't be "blocked", although they can be interrupted. they can also be removed, and for that you'll just need good battlefield awareness and pay attention to any monks or monk secondaries that are on the enemy team.
also, no one has mentioned it yet, but degen will stack up to a total limit of -10 degen.
