I was wondering about pets? Can you have a lot of pets with a ranger or are you stuck with the first pet you charm?
if you charm a pet, can you get rid of it and charm another?

You can get rid of a pet by equipping the pet skill and talking to an NPC marked as a pet trainer. Initiate dialogue with him and he'll eventually offer to take your pet.
This way, you lose your pet, and can charm a new one using the charm animal skill.
I know there's a pet NPC right outside House zu Helzer, and right outside Ascalon and right outside the Sunspear great hall. ALL ARE OUTSIDE, in explorable areas.
Also, you may want to give the pets away in the Zaishen menagerie, so it becomes easier to get a new one when you want one.

If you show your pet to the Zaishen Menagerie first, that animal type and level (if you've hit the max or certain cutoffs) will be saved if you want it again. Then you can freely get rid of your pet and charm another.

You can only have one pet at a time. But.....
Yes. There are [trainer]s in various places - outside Ascalon City and in Gwen's Garden in EotN, etc. - who will take your pet off your hands. Best thing though is to get to the Menagerie (from The Great Temple of Balthazar, Battle Isles) - there you can start your own private "zoo" and keep the various pets you pick up along the way.
