This is the build I am going to be using to tank as my sin.

What kind of armour and weapons do you guys think would make for a good tanking build?
Roughly how much energy and health should I have?
Sorry to be somewhat of noob, just looking for advice as I've never been one to figure out equipment.

One thing I hope you realize is that with only Shadow Form and no recharge-time modifiers, even with 16 Shadow Arts and an enchanting weapon, you will only be able to maintain it for 26.4 seconds consecutively.
For armor, blessed armor is always a plus, an extra 10 armor is always helpful since it looks like you'll always be enchanted.
As for weapons, I would suggest a 1-handed weapon (spear preferably, axes & swords work as well) with an `of enchanting` suffix and an "I have the power!" inscription. A shield to go with your weapon allows you 8 armor, even without meeting the requirement, and either a -2 damage while enchanted or 10AL vs X-Damage-Type should suffice quite nicely.

I believe the skill you're thinking of is Deadly Paradox (not Assassin's Remedy) for the 33% faster recharge on assassin skills.
That would definitely be okay as far as weapons go then. It really depends on the area you're trying to tank for, or if you're trying to tank in a specific area.

Yes Deadly Paradox is what I was thinking of, and I was looking for more of a general tank for anywhere rather then just one area.

Your first build has an overabundance of damage reduction, nothing hits that hard. You would be better off being able to permanently maintain Shadow Form, only needing to worry about Touch Skills & Attacks.

Any area with monsters that have interrupting spells or fast casting spells that do big dmg will require you to have shadow form up 100% of the time, and thus require an essence of celerity or deadly paradox.
To be honest with you having Shroud, IAU and Mental Block is enough to tank most HM DoA mobs, and you won't get many enemies that hit harder than that.
