I wanna start over with GW after a long period of not playing...
I was wondering is there any combo that does absolutly beast dmg in pve enviorment? or is everything kind of leveled out? was thinking of E/Me or something

Every profession can deal insanely massive amounts of damage, what it boils down to is what the scenario is.
My advice is to pick a profession that appeals to you, rather than picking one just for damage. Then just change your skills and attributes to fit each challenge you come across. You'll eventually find builds that work just as effective in most situations, no matter what profession you pick.

It depends a bit on how you define "damage". Some classes are better for direct physical damage, some for direct elemental damage and some are best at degen/interrupt type damage.
An E/Me would be good for AoE direct damage and some degen/interrupt. In any case each class is capable of doing enough damage.

Until you reach Hard Mode, you will find all profs can deal (impressive amounts of) damage.
If you are interested in really getting the most bang for your buck with one character in hard mode some profs are better than others.
Choose your primary based on what you want to play, you don't need to get too picky with your secondary since you can swap it out later.

All professions are very capable of finishing the game in nm and hm. The question you want to ask yourself is what ttracks you in type of gameplay and what kind of game you wanna play.
1: Warrior, Can do nice damage, but can also be a very good tank.
2: Monk, very welcome in most groups, but also good at solo farming. A bit limited on soloplay with hero's
3: Ranger, nice in PvP and when you are a social I wanna play for fun kind of guy
4: Ele, from the three core casters the most versatile of them. Can be a good healer, can be a solofarmer in certain high-end area's, can tank and is a very nice nuker. So if you like to be able to go a lot of ways, go ele. but keep in mind on every job there is profession that can do it better.
5: Necro, great nuker, specially combined with a good tank that balls the enemy's. But is also very good in playing solo with hero's and welcome in most groups.
6: Mesmer, good nuker, good interupter. very welcome in pugs, but also very good with hero's.
7: assasin, a very nice tank, solo farmer and high end speedclears. most high end builds need some gaming skills and are a bit odd at first glance. nice to play, but not really straight forward. If going for making money this would be the best pick atm.
8: Ritualist, a healer, a nuker, a tank and a farmer. A bit like the ele (though easier with hero's, welcome in pugs if you are the only one)
9: Dervish, the best in PvP, but also very good at PvE. best for melee damage. Can farm reasonable and is welcome in pugs too.
10: Paragon, For a leader it must be lonely at the top. The most difficult to understand profession. though it can be great with hero's and pugs, it is a hard one to get your finger round. If you like a challenge, this should be yours though. But be warned, a lot of failed in understanding this fine art.

All the professions can be worked to do damage and they all can use PvE-only skills. Much more important is finding your preferred style or method of dealing it.
Paragons for example tend to have single target damage and party boosting skills, but it's tricky to take advantage of it. The monk's Smite Prayers attribute is suppose to be for damage, but it blows.
