I'm very sorry for this sort of noobish question (I'm a noob) but I'd like to know if I get more options than those originally given if I purchase an appearance change. Or is it strictly limited to the class still?

If you mean can you give your monk the face/hair of a ritualist by buying the Makeover pack...no. You are limited to only the faces/hairstyles/etc. for the profession of the toon getting the makeover.

Well, what I've seen is that for example an elementalist from the original game can buy an appearance pack and pick styles from its factions and nightfall counterparts, but a ritualist is from Factions and has no "other" options in the other games. So am I limited to the factions appearance dependant on profession?

You should be limited that way, yes. You can check by going to the stylist and playing around, though; there's no fee for that.

To be more clear, if you buy a Makeover pack, your character will be able to choose any face, hair and hair/skin colour from any campaign as long as it's from the same professions
For example, your Monk could choose a hairstyle from the Nightfall monk choices, a face from the Canthan monk choices, and a skin/hairtone from the Tyrian monk choices, but they will have no access to any Elementalist or Ritualist or Dervish options.

All 6 of the basic professions (monk, war, ele, ranger, necro, and mes), get to choose any hairstyle, face, skin color, etc. from any of the 3 campaigns. Dervs, paragons, rits, and sins only get to choose features from their respective campaign.

Note that you can go to the appearance changer NPC in Great Temple of Balthazar (I forget the specific name) and preview all the available choices before actually purchasing a make-over.
