If I wear full ascetic , and take one piece off, and add lke a judges piece for +10 armor vs phys, will I get the +10 or do I have to wear full judges for it...?
Same goes for judges, can 1 piece just give me that effect? So can I in theory
wear 1 judge and 1 saints and rest ascetic, and gain the jude/saint/ascetic all at once?

What happens is that each piece of armor has a separate armor rating. Whenever a damage spell (although many ignore armor) or attack hits you, then the game program randomly selects a piece of armor.
Some pieces of armor are more likely to be hit than others (some spells will automatically hit a certain piece of armor):
Chest Armor - 37.5% chance to be hit.
Leg Armor - 25% chance to be hit.
Head/Arm/Feet Armor - 12.5% chance to be hit.
So, if you make your Chest be a judges piece, then you get the +10 armor bonus whenever the Chest gets hit (i.e. 37.5% of the time).
Note: The only armor bonus that doesn't work like this is for Warrior armor. The Reduces Damage from Attacks bonus will work for all your armor, even if you only have one piece.

theclam is right on...generally speaking, unless you're doing something special, just go with Judge's Chest & Legs and Aesthetic's Hand & Feet.
