Sorry this is pretty stupid to ask but Im new to necromacers and heard people talking... When you sacrafice a % of health do you get it back? Take order of the vampire for instance.

simple answer: no

you do have other vampiric skills to regain health, and there's always the monk

You do regain the health back, but only via spells, natural recovery, etc. It won't magically recover safter a time while in battle.

This means you can't go crazy with those sacrifice spells as you will kill yourself

Like say you have 500 health and cast Dark Pact at a target, you would then loose 50 health from the spell as you need to sacrifice 10% of your health to cast it. To recover that 50 health you need to either self-heal (through the vampire spells, life leeach, monk heal spells, etc), have a team-mate heal you or leave battle and recover the health normally (you get pip's of health back when not in combat).

Just balance out sacrificing skills with life stealing skills and it will work out. Example:

Dark Pact
Shadow Strike
Dark Pact
Vampiric Gaze

Also spells like Well of Blood and Life Siphon can provide health regen to keep a flow of healing coming in.

If you are getting beat up then use Vampiric Gaze and Vampiric Touch to stay alive and skip the sacrificing spells.

Of course a good monk on the team never hurts, either.

Even better when you monk is good enough to know when not to heal your sacrifices because he/she knows you'll be stealing some life right back.

Sacrificing is usually one of the most notable powers of the necromancer. With vertas sacrifice and blood of the master it is possible to keep upto armies of 30 fiends alive. Think how much of a force that is when each does 10 dmg. do the math.

I see what you are thinking, when you sacrifice 10% of your max health its like this: 490/500 health...you dont sacrifice your max health, just a bit of hp...so it's 490/500, not 490/490 from a base of 500

Losing 50 health to a sacrifice is just like losing 50 health to an enemy attack. You can gain the health back in all the normal ways.
