Sorry if this has been asked, but are there any skills to unlock, for new and existing professions? I won't be able to play until later, so I want to make the best use of my time.

If you mean new skills, then yes, but only for the new professions.

After the release of GW: Factions, there will be 20-25 new skills for the existing classes, too.

I think you mean ~300 new skills not 20-25. That is inluding Asassin and Ritualist, though.
