Whats the differnce between Def Stance and Disc Stance?

Blocking and evading, can disc stance block spells? I dont unerstand what the difference is.

Certain attacks have different effects depending on whether you "block" or "evade". Read the skill descriptions for "Griffon's Sweep", "Swift Chop" and "Seeking Blade" for example.
