I run a guild with 100 members and setting up GvG matches can still take ages.
If I put a shout out in guild chat I will often get replies from people who want to do GvG matches, however if these people are mid mission I tend to wait until they are done and work on a first to respond gets a place in GvG.
An easy answer would be to have a little tick box next to a players name which they can check if they are ready or up for a GvG match, I know the classes of pretty much every member in the guild and could then look down the list of GvG ready players and select a balanced team.
It would just make GvG matches a little quicker to setup for me and my officers. This way I could also ensure that everyone gets a fair chance to participate in GvG.

What is usually done in my guild when there are more players than spots open is we have a GvG waiting channel on Vent. then we can see who is ready and waiting to join!

My guilds rank 10 atm we can set up groups in like 15 minutes because we have agreed on times to be on for GvG.
If your guild is that big you could try to make different GvG groups (but always whit the leader or 1 of the officers in it). And then all agree on a different time to GvG and so have multiple GvG groups. (of course if you play GvG for fun:P)

There is nothing Anet can do about this issue. Make rules for your guild (gvg first priority), forums help to construct groups, and schedule times for gvg. This is an issue that only a guild can solve. If it doesn't work out that way you might want to find a new guild.
