You can rid yourself of your pet at the Tamer's just outside of Ascalon City. This will allow you to tame a new one.
Also, when you talk about deletion, you mean the wipe occuring just before gamelaunch? If so, characters are being /reset/. This means starting from square one but retaining their names. Believe you'll have to select their classes again, even.

we have had a pair of level 20s fail to get the bear as it can spam break charm faster than you can do anything

i think the bear would be overkill compared to the others

to find out which is more powerful take the cat out and have it fight the others and see who wins consistently
i couldnt dye my cat so it might have been a special case but it was labled mxxx stalker and had red side stripes

There have been a few pet threads, but I will just say a couple things:
Each pet seems to have a slight advantage/disadvantage as compared to the others. Consider the following:

Boar (Oink!)-Slow---------slow-------------high--------------high
Moa Bird ---Fast----------fast-------------low---------------low
Lynx-------medium--------med-------------med--------------med
Stalker-----medium--------fast-------------med--------------med
Wolf-------medium---------Med-------------med--------------high
Since I have tried them all, this is the best I can venture. All of these abilities are all relative to the general effectiveness of a pet of course, which changes with their levels and is obviously less effective than a player char. Still they are nice to have, especially with those new skills they added. Kitties can pounce!
